Meal Plan – February 23 – March 1, 2015

It’s Saturday night as I’m catching up on more episodes of Gossip Girl and putting together this week’s meal plan. I figure the early bird not only catches the worm but gets the grocery shopping done for the week on Sunday too…fingers crossed!

Monday – My parents are back from a 6-week trip to India so we are all going out to dinner together!

Tuesday – Mexican Chicken Stir Fry with steamed rice

Wednesday – Coconut Crunch Chicken Strips with honey-mango dipping sauce and steamed broccoli.

Thursday – Seasoned Tilapia with pistachio brussels sprouts

Friday – Slow-Cooker Beef Stew

Saturday – Lemon Garlic Chicken with greek quinoa

Sunday – Leftovers

  1. Your menu items sound good. This week, I found a recipe for pot-roast chicken. We’re eating the legs and wings with the stew veg that night, the breasts in gravy with mashed potato and swede served with dark kale the next night, and the following meal will be curry with the leftover pieces, carrot and lentils, and crisp flatbread.
