Meal Plan – July 27-Aug 2, 2015

Anyone else finding it hard to actually cook everyday during the summer? The days are filled with activities and outings and fun and the last thing I want to do when I get home is cook! I guess that’s where the meal planning comes in handy so that dinner time is a lot easier. Here is what’s planned for this coming week.

MondayIn last week’s meal plan, I didn’t actually get to make the Chicken Lazone. But it looks so good (and I already bought the ingredients) that I’m going to add it to this week’s meal plan. 

Tuesday – Slow Cooker Beef and Broccoli with easy steamed rice.

WednesdayChicken and Potato Casserole with a green salad

ThursdaySeasoned Tilapia with homemade fries and steamed edamame

Friday – Mom and Dad have a date night, so the kids and their babysitter will be eating One-Pot Mac n’ Cheese with celery and dip.

Saturday –  Leftovers

Sunday – Dinner with family

  1. Our challenge is commuting between our house and my elderly mother in law’s some 150 miles away, and cooking a “cardiac” diet for her (low sodium, lots of protein). So that is the thrust of our dinner planning this week – trying to stay away from prepackaged, high sodium, food, and still being able to do other caregiving duties.
