Raw Cookie Bites

Recently we’ve been making some changes in our household due to a few dietary restrictions for my husband. I’ve been trying out different dairy-free, gluten-free, grain-free recipes. I had success with these Raw Cookie Bites that only require four ingredients and no cooking!

Ingredients:

1 cup unsalted cashews
3/4 cup pitted dates
1/4 cup dry apricots
3 Tbsp (dairy free) chocolate chips (or cacao nibs)

Instructions:

1. Put the cashews into a food processor and blend until they are in tiny pieces.

2. Add the dates and apricots to the food processor. Blend everything together until it is well combined. Put the “dough” in a separate bowl. Add in the chocolate chips (or cacao nibs) and gently mix them in.

3. Wet your hands a little and then take about a one or two tablespoons of the mixture in your hands (depending how big or small you want them) and shape it into a ball. Place it into a plate or tray. Continue doing that until all the mixture is finished.

4. Put them in the fridge for about 30 minutes to get firm and then enjoy! Simple, tasty and healthy.

**The kids didn’t enjoy the cacao nibs, so what I did was put chocolate chips in half the mixture and the nibs in the other half to make everyone happy.

  1. This has been pinned to my gluten-free board. It sounds absolutely delicious. I haven’t tried nibs yet and have been seeing them appearing in stores – might give this a try.

  2. These look good! Dairy free, grain free, gluten free sounds pretty restrictive but if you keep coming up with stuff like this I think he will be a happy camper!

  3. OMG!!! Salma, these turned out great! I used raw cashews and Turkish apricots . The only tricky part was how sticky the “dough” got in the food processor. The solution was to process the dates + apricots, then slowly add the cashews.

  4. So, I just made a batch of these using almonds….wow! Good!
    A bit drier, so I needed to add more apricots to get the “dough” stickier, but they’re fantastic.
