Frozen Yogurt Covered Blueberry Drops

Our family went blueberry picking for the first time a couple weeks ago. We had a great time and brought home lots of delicious BC Blueberries. They were so sweet and we really enjoyed eating them just like that!

We did get the idea from Didar Berry Farm where we did our U-pick to try freezing them, so we came up with this super easy snack idea that’s perfect for summer, Frozen Yogurt Covered Blueberries.

Ingredients:

Frozen Yogurt Covered Blueberry Drops
– BC Blueberries
– vanilla yogurt (any yogurt you like will work)
– skewers
– foil

Instructions
1. Take a piece of foil and lay it on the counter. If you have a small cutting board, put it under the foil.

2. Take a skewer and insert it in the centre of a blueberry. Then dip it into the yogurt. The trick is to stick the blueberry in the yogurt and spin it until it’s covered. Then place it on the foil. Continue doing this with all the berries. This would be a fun part for the kids to help with.

3. Then put your foil tray into the freezer you’ll need to leave them in for at least 45 mins to 1 hour. The first time we made them, we took them out after half and hour and that was too soon. They started melting too quickly, but they still tasted good!

The longer you leave them in, the harder they will get. Then store them in a container and eat them whenever you need a snack. Although I have to tell you, they all disappeared really quickly!

Whether eaten raw or frozen, blueberries are a great snack. They are healthy, sweet and full of antioxidants, so a great choice, any time of the year. What’s your favourite way to eat blueberries?
