Today was a low-key, rainy day. We had to stay home as each unit in the building was getting their smoke alarms and speakers tested. We were able to get to the library for story time. Then it was nap time. The workers decided to re-test the loudspeakers on our floor and of course both kids got scared and woke up early from their naps.
So we had an extra hour on our hands and decided to make oatmeal chocolate chip cookies. According to Keyan, we can’t make cookies without chocolate chips! This is a mish mash of different recipes I’ve tried in the past. It’s simple, not to sweet, soft and good for the kids to help out with.
So here is what we used:
1/2 cup butter, softened
2/3 cup dark brown sugar
1 tsp vanilla extract
3/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
1.5 cups quick oats
1/2 cup chocolate chips
1. With your electric beater, mix the softened butter until it’s creamy.
2. Add the brown sugar and beat again.
3. Put in the egg and vanilla and mix with the beater until smooth.
4. Then in a separate bowl, combine the flour, baking soda, cinnamon and salt. Stir with a spatula.
5. Add in the oats and chocolate chips. At this point, you can add any other ingredients you want, like raisons, cranberries or nuts. It’s your preference.
6. Slowly pour the dry ingredients in the first bowl and mix with a spatula until well combined. Don’t over mix it.
7. Then cover the bowl and put it in the fridge for about 20 minutes to chill. In the meanwhile, put some parchment paper on a cookie sheet.
8. When the time is up, preheat your oven to 350 degrees. Take a big tablespoon of dough, make it into a ball shape. Then put it on the baking sheet and flatten in out with the palm of your hand. Continue until the batter is finished. I got 24 cookies in this batch.
