Roasted Cauliflower with Indian Spices

In our house, we have a rule that there has to be at least one vegetable on the table with dinner, no matter what we are eating. Whether it’s a home cooked meal or take-out, veggies are not optional. Sometimes we have raw veggies like carrots, cucumbers and celery. Other times it steamed broccoli, edamame or roasted Brussels sprouts. And sometimes it’s this super delicious Roasted Cauliflower with Indian spices.

The recipe is very straight forward and when it’s ready, it get’s gobbled up right away, for real. The kids like it too because it has a great flavour without being spicy!

Roasted Cauliflower with Indian Spices Recipe

Ingredients:

-one head of cauliflower, cored and cut into small pieces
– 1/4 cup of oil (I’ve used canola, avocado and olive)
– 1/2 tbsp of garam masala
– 1/2 tbsp of curry powder
– 1 tsp ground cumin
– 1/2 tsp salt

Instructions:

1.Preheat your oven to 425 degrees

2. In a large bowl, combine the oil and spices and the salt. Mix it well.

3. Add the cut cauliflower into the bowl. Toss and mix well with a spatula until the cauliflower is completely coated.

4. Spread the cauliflower out evenly on a baking sheet. Put it in the preheated over for 40-45 minutes. The cauliflower should be a little browned and the stems tender to eat.

  1. Hi, I’ve made this so many time I can’t count…I add 1/4 teaspoon cinnamon, but that’s it. Awesome recipe, thank you.
