We love muffins in our house. Sometimes they are an afternoon snack, sometimes a part of the lunch box and often they are for breakfast. So today, I thought I would share with you, 5 Muffin Recipes We Love, just in case you are a muffin loving family as well!
1. Banana Chocolate Chip Muffins
These are the muffins that started it all. We tried this recipe from Cat Can Cook and we were hooked. Then we tweaked the recipe a little for our tastes, and now they are a staple in our home, especially when we have a bunch of overripe bananas. They work great as regular size or mini muffins and taste just as amazing without chocolate chips!
2. Double Chocolate Mini Muffins
Whenever we made muffins in our house, the hubby would look a little sad. He couldn’t eat them because of the gluten, so of course, being the lovely wife that I am, I started trying different flourless muffin recipes. This double chocolate mini muffin recipe was a hit with everyone! And they are so easy to make, just blend, pour and bake, for real.
3. Peanut Butter Mini Muffins
This is another flourless muffin recipe that the whole family loves. They are seriously delicious. I now have to make two batches at a time because they disappear so quickly! A side note, they are also super easy to make.
4. Breakfast Muffins
I thought I’d continue with the gluten-free, flourless recipes. These Banana Oatmeal Chocolate Chip Muffins are perfect for those days when you need to grab some breakfast and go. They are flourless and sugarless. Most importantly, they are kid-approved. You can even make them the night before to save time in the morning.
5. Blueberry Muffins
One day the kids requested blueberry muffins from a local coffee shop we go to. Instead, I told them that we were going to make muffins that tasted just as good, at home. This recipe we found was great and the muffins turned out delicious. I’ve even subbed the frozen blueberries for frozen strawberries and those were good too!
